I’ve developed this obsession with making cupcakes and trying new recipes for them. This is the latest one I’ve found. The recipe as well as some tips to make it even better follow.
Mini OREO Surprise Cupcakes

Ingredients
1pkg (2 layer size) chocolate cake mix (plus ingredients on box)
1 pkg. (8oz.) brick cream cheese, softened
1 egg
2Tbsp. sugar
48 Mini Oreo bite size cookies
1 1/2 Cups thawed whipped topping
Instructions
Heat oven to 350 degrees
Prepare cake batter as directed on package. In separate bowl mix cream cheese, eg and sugar until well blended.
Spoon half the cake batter into 24 paper lined muffin cups. top each with about 1 1/2 tsp. cream cheese mixture and 1 cookie; cover with remaining cake batter.
Bake 19 to 22 min. or until toothpick inserted in centers comes out clean. cool 5 min.; remove from pans to wire racks. Cool Completely.
Frost with whip topping and remaining cookies.
Jen’s Extra Tips: less is more when adding the first round of cake batter. If you get it too full then there is not room for the filling. More filling would make for a more interesting tasting cupcake. Consider making 1 1/2 times the filling recipe for extra flavor. For extra chocolate flavor dip the tops in Velata Milk chocolate and let harder before adding the whipped topping and Oreo.
